hmmm... the only inbuilt feature is who sends the email into the library. This would require instant forwarding on the server level to the library. Othewrwise it will take the metadata from the user who then sends the email into the library.

Enable email --> Edit view and display Email From and Email To. (I beleive the to will always be the sharepoint list however)

Will most likely need a custom event handler or something along those lines to get what you need.

    There is a plug-in for Outlook 2007 from U2U, and I've just written a plug-in for Outlook 2003 - I've written about them at http://www.novolocus.com/2008/05/07/outlook-2003-to-sharepoint-2007-email-integration/

We have just bought a commercial product from an Australia-based company called Macroview - see http://www.macroview.com.au/WisdomMessage.htm

This works with Outlook 2003 and 2007 and stores emails as .msg docs in document libraries (they supply library template with an email content type) and preserves all mail attributes - to, from, CC, BCC, subject, time recieved  etc.. though we are having problems with one PC that has eVault add-in too.
